Yep, you can try this as a simple stand alone Server set-up -- LAMP On Ubuntu 6.06 For Noobs @ http://www.howtoforge.com/lamp_installation_ubuntu6.06. Here you would use the Server Version of the available UBUNTU download. What you might want is The Perfect Setup - Ubuntu 6.06 LTS Server (Dapper Drake) @ http://www.howtoforge.com/perfect_setup_ubuntu_6.06. This would use the UBUNTU 6.06 version. That's the latest and greatest. Here go for the full DVD download.
Or, you can roll your on with the 6.06 version by adding what you want from this UBUNTU Guide -- http://ubuntuguide.org/wiki/Dapper.
It all depends what you mean by Server. But, it is all there. Have fun.
